Cheesy French Onion Soup Pasta Casserole

1 teaspoon fine grind sea salt
1 teaspoon dried thyme leaves
1/2 teaspoon fine grind sea salt (for beef)
thinly sliced beef (carne piccata or similar)
1 bulb roasted garlic

Turn on the Ninja Foodi or Instant Pot to High Sear Saute and hit start.

Add 4 tablespoons of ghee to the pot.

Slice 3 pounds of onions in half from stem to root, peel, and slice into half-inch slices.

Add the sliced onions to the pot.

Sprinkle 1 teaspoon of black pepper, 1 teaspoon of fine grind sea salt, and 1 teaspoon of dried thyme leaves over the onions and toss to coat.

Leave the onions to cook on High Sear Saute for 10-12 minutes without stirring.

After 10-12 minutes, toss the onions around to mix the browned ones on top and the less cooked ones on the bottom.

Continue to sauté the onions, tossing them every 5-7 minutes until they are golden brown and caramelized, which should take about 25 minutes total.

Once the onions are caramelized, remove about half of them from the pot, leaving about 1.5 to 2 cups in the pot.

Add thinly sliced beef to the remaining onions and season with 1/2 teaspoon of fine grind sea salt, tossing to mix.

Add 1 bulb of roasted garlic (or raw garlic if preferred) to the pot with the beef and onions.

Cook until the beef is no longer pink.
