Heat milk to 100°F (37°C) and add dry active yeast to activate it.
In a stand mixer, combine bread flour, salt, white sugar, and brown sugar.
Add cooked and mashed potatoes to the dry ingredients.
Incorporate 1 egg and 1 egg yolk into the mixture.
Slowly drizzle in the yeasty milk mixture and mix until a dough forms.
Add softened butter gradually until incorporated; the dough will be sticky.
Flour the work surface and shape the dough into a ball, lightly kneading it.
Place the dough in a greased bowl and let it rise for about 2 hours until doubled in size.
Portion the dough into 110-gram pieces and shape them into balls.
Place the balls on a parchment-lined sheet tray and let them proof for another 30 minutes to 1 hour.
Brush the rolls with an egg wash (1 beaten egg with 1 tablespoon water).
Preheat the oven to 375°F (190°C) and bake the rolls for 15-20 minutes until golden brown.
Brush the baked rolls with melted butter before serving.
