Cook spinach fettuccini in boiling water according to package directions.
Rinse scallops under cold water and pat them dry thoroughly with paper towels.
Season scallops with salt, black pepper, and garlic powder.
Pour olive oil into a sauté pan and heat until hot.
Add scallops to the hot oil and sear for 2 to 3 minutes without moving them.
Flip scallops and sear for another 2 to 3 minutes until browned on both sides.
Remove scallops from the pan and let them rest.
Add chopped garlic and butter to the pan and cook until garlic softens.
Deglaze the pan with white wine and add fresh lemon juice and lemon zest.
Stir in fresh Italian parsley and let the sauce simmer and reduce.
Add cooked spinach fettuccini to the pan and mix to coat with the sauce.
Stir in parmesan cheese (optional).
Serve pasta in a bowl topped with 3 or 4 seared scallops and drizzle with pan sauce.
Garnish with more fresh Italian parsley and lemon zest.
