In a pot on medium low, melt 1/2 stick of butter.

Add 1/2 cup of flour and stir together with the butter.

Pour in 1 cup of whole milk and mix well.

Season with salt, black pepper, garlic powder, and onion powder.

Shred 1 cup of habanero cheddar cheese and 1/2 cup of Swiss cheese, then add to the pot.

Add another 1/2 cup of milk and mix until combined.

Pour in 1/2 cup of beer and stir until thickened.

Air fry 5 strips of bacon at 400°F for 11-12 minutes, then chop into pieces.

Add about 3/4 of the chopped bacon to the cheese mixture and stir to combine.

Serve the beer cheese with waffle fries, garnishing with the remaining bacon and chopped cilantro.
