Wash the apples and remove the stems.
Core the apples using an apple corer and cut them into chunks without peeling.
Add the apple chunks to a pan.
Squeeze the juice of one lemon over the apples and mix to prevent browning.
Add 3/4 cup of water to the pan.
Add a pinch of kosher salt and 1 teaspoon of cinnamon to the pan.
Add 1/4 cup of sugar to the pan and stir the mixture.
Turn the burner to medium-high heat and bring the mixture to a boil.
Once boiling, cover the pan with a lid and reduce the heat to medium-low.
Let it simmer for 20-30 minutes, stirring occasionally.
After 20 minutes, check the consistency and taste the mixture.
If desired, add more cinnamon and sugar to taste, then stir.
Once the desired consistency is reached, turn off the burner and let it cool slightly.
Transfer the applesauce to a mason jar or bowl for storage.
