Instructions
- 1In a food processor, combine the mixed nuts and pulse until finely chopped.
- 2Add the pitted dates, coconut oil, vanilla extract, and salt to the food processor. Blend until the mixture is sticky and holds together.
- 3Line a pie dish with parchment paper for easy removal.
- 4Press the nut and date mixture into the bottom and up the sides of the pie dish to form a crust.
- 5Chill the crust in the refrigerator for about 30 minutes to firm up.
- 6While the crust is chilling, prepare the fresh fruits by washing and slicing them as needed.
- 7Once the crust is set, remove it from the refrigerator and fill it with the prepared fresh fruits.
- 8Sprinkle shredded coconut on top if using.
