Today, air fryer variations offer a healthier twist, making this classic dish accessible to a wider audience while still delivering that satisfying crunch.

Start with 10 eggs, remove 2 for later, and boil 8 eggs in a pot of boiling water for 4 minutes and 30 seconds.
Immediately plunge the boiled eggs into ice water for 10 to 15 minutes to cool.
Peel the eggs carefully under running water to avoid tearing the white.
In a mixing bowl, combine 2 pounds of ground pork with 2 teaspoons of ground black pepper, 1 tablespoon of kosher salt, 1/2 teaspoon of cayenne powder, a small pinch of ground allspice, 1 tablespoon of light brown sugar, 1 tablespoon of dijon mustard, 2 teaspoons of worcestershire sauce, 2.5 tablespoons of finely chopped sage, and 1/4 cup of finely chopped parsley. Mix until combined and knead for 1-2 minutes until tacky.
Divide the meat mixture into 8 evenly sized balls.
Lay down a sheet of plastic wrap, place a meat ball in the center, and press it out to form a circle about 2.5 times the size of an egg and under half an inch thick.
Coat each egg in plain all-purpose flour, shaking off the excess, then place it in the center of the meat disc.
Using the plastic wrap, gather the sides to cover the egg completely, then seal it by hand to ensure there are no holes.
Prepare a breading station with one bowl of seasoned flour, one bowl of panko breadcrumbs, and one bowl with 2 beaten eggs and a splash of water.
Coat each meat-wrapped egg in the seasoned flour, then dip it in the egg wash, and finally coat it in panko breadcrumbs. Repeat for a double coating.
Heat oil to around 350°F (175°C) and fry the eggs in batches of 2-3 for 5-7 minutes until golden brown.
Place the fried eggs on a wire rack to drain and repeat with the remaining eggs.
Cut open the fried scotch egg to reveal the soft yolk inside.
