Take a cut up chicken, preferably larger for better browning.
Marinate the chicken in oregano, shallots, and vinegar for about a day.
Brown the marinated chicken over medium heat in a cast iron skillet until it is brown, not beige.
Reserve the marinade as it adds vital flavor to the dish.
Once browned, deglaze the skillet with sweet vermouth and white wine.
Add bay leaves, dried apricots, green olives, capers, dried plums, and brown sugar to the skillet.
Add the reserved marinade back into the skillet and mix well.
Bake the mixture in the oven for about 1 hour and 15 minutes.
Reserve a little brown sugar and sprinkle it over the top before baking to create a crust.
After baking, check the dish for a beautiful crust and serve.
