½ cup red wine vinegar
16 pitted prunes (divided)
4 lbs chicken thighs, boneless skinless
16 pitted Spanish green olives
½ cup capers
3 bay leaves
10 cloves garlic, chopped
0.5 oz fresh oregano, leaves only
2 tsp kosher salt
1/2 tsp ground black pepper
1 cup dry white wine
¾ cup brown sugar

In a blender or using an immersion blender puree the oil, vinegar and 4 prunes until smooth and thick.

In a large mixing bowl add the chicken, remaining prunes, olives, capers, bay leaves, garlic, oregano, salt and pepper. Pour vinegar mixture over all and toss to coat. Cover with plastic wrap and marinate in the fridge overnight.

Preheat oven to 350ºF.

Arrange the chicken in a single layer in roasting pan or large shallow baking dish(es) and spoon marinade ingredients on and around the chicken. Pour the wine around the chicken and sprinkle the brown sugar over chicken.

Bake the chicken for 50 minutes, or until it's cooked through and internal temp reaches 165°F, basting with the pan juices in last 20 minutes.

Serve spooning sauce over chicken.
