Peel and smash garlic cloves.
Add oregano, quartered dried prunes, halved green olives, caper juice, capers, red wine vinegar, olive oil, salt, and pepper to a bowl and mix together.
Add chicken thighs to the bowl and mix everything together.
Cover the bowl and let marinate overnight in the fridge.
The next day, place the chicken thighs and toppings into a baking dish.
Sprinkle brown sugar over the chicken.
Pour white wine around the chicken.
Bake in the oven until done.
Transfer everything to a serving platter using a slotted spoon.
Sprinkle with parsley and spoon some of the juices on top.
Save the juices in a gravy boat and serve chicken marbella over rice with crusty bread.
