Mexican Chicken Casserole

8 oz angel hair pasta
2 cups cooked chicken, shredded
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) chicken soup
1 cup sour cream
1 can (10 oz) Rotel
2 cups shredded cheddar cheese
1/2 cup green onions, chopped
1 cup fresh tomatoes, diced

Preheat the oven to 350 degrees.

Bring water to a boil and cook the angel hair pasta according to package directions.

Chop the chicken into about 1-inch pieces and cook in a skillet over medium heat until cooked through, then set aside.

Drain the water off the cooked angel hair pasta.

In a mixing bowl, mix together the cream of mushroom soup, chicken soup, sour cream, and Rotel.

Add the drained pasta and cooked chicken to the mixture and combine well.

Pour the mixture into a 9 by 13 inch casserole dish.

Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes or until bubbly.

Remove the casserole from the oven, sprinkle cheese on top, and return to the oven for about 5 minutes or until the cheese is melted.
