1 lb cauliflower florets
1 teaspoon salt
1 cup refined flour
1/2 cup corn flour
1 teaspoon baking powder
3/4 cup water

2 cloves chopped garlic
1 tablespoon ginger
1 green chili, chopped
1/2 onion, diced
1/2 cup green capsicum, diced
1/2 cup red capsicum, diced
1/2 cup yellow capsicum, diced
1/2 cup tomato puree
1/4 cup tomato ketchup
2 tablespoons red chili sauce
1 tablespoon vinegar
1/2 teaspoon black pepper
1 teaspoon chaat masala
1 teaspoon red chili powder
2 spring onions, chopped

Heat water in a pan, add cauliflower florets and salt, mix well and boil.

Take refined flour, corn flour, baking soda and add little water at a time in a mixing bowl and mix well.

Add salt and water as required, mix well and make a thick batter.

Add 1 tsp of oil to the batter and mix well. Keep it aside.

Drain the boiled cauliflower and place it on a plate, pat the florets dry with a kitchen towel to remove any extra moisture.

Heat oil for deep frying on medium flame.

Take the batter and put a drop of it in the oil; if the batter comes up and puffs up, the oil is ready for frying the cauliflower.

Place some cauliflower florets in the batter, coat the florets evenly, and place the batter-coated cauliflower florets in hot oil to fry.

Remove the cauliflower florets and place them on kitchen paper and keep them aside.

Reheat the oil and double fry the cauliflower until crisp, then drain off over kitchen paper and keep it aside.

Heat 1 tbsp of oil in a wok, add chopped garlic, ginger, and green chilli, mix well and sauté for 1 minute.

Add chopped onion, green, red, and yellow capsicum, mix well and sauté.

Add tomato puree, tomato ketchup, red chilli sauce, vinegar, crushed black pepper, chaat masala, red chilli powder, and salt, mix well and sauté.

Add water and mix well.

Take corn flour in a mixing bowl, add little water, mix well to make a slurry.

Add the fried cauliflower into the pan, mix well and sauté.

Add half of the corn flour slurry, mix well and sauté.

Add chopped spring onion and mix well.

Remove to a serving plate, garnish with chopped spring onion, sprinkle some crushed black pepper on top, and serve hot.
