Lavar la gallina india y colocarla en una olla grande.
Agregar 10 tazas de agua a la olla con la gallina.
Cocinar la gallina durante 3 horas hasta que esté muy blanda.
Sofreír cebolla y ajo en la olla antes de agregar la carne de gallina.
Agregar la carne de gallina a la olla.
Incorporar cilantro y apio para dar sabor, pero retirarlos antes de agregar las verduras.
Agregar 2 zanahorias, 1 calabaza pequeña, 4 ramas de apio y 1 chile campana a la olla.
Sazonar con sal y pimienta negra, y añadir consomé sabor pollo si se desea.
