Choucroute Garnie

150 g bacon
200-300 g sausage
3-4 tablespoons cooking oil
1/4 cup white wine
50 ml vinegar
1/2 teaspoon fennel
1/2 teaspoon thyme
1 teaspoon peppercorns
1 star anise
1 teaspoon chicken stock
1 cup water

Chop 2 onions and 1 carrot.

Slice 5-6 pieces of cabbage.

In a pot, heat 3-4 tablespoons of cooking oil over medium heat.

Add the chopped onions and fry for about 10 to 15 minutes until they are translucent.

Add the sliced carrot and fry for about 2 to 3 minutes.

Add 150 g of bacon and 200-300 g of sausage to the pot and fry for another 2 to 3 minutes.

Pour in 1/4 cup of white wine and 50 ml of vinegar.

Add 1/2 teaspoon of fennel, 1/2 teaspoon of thyme, 1 teaspoon of peppercorns, and 1 star anise to the pot.

Stir everything together and cook for a few minutes to combine the flavors.

Add the cabbage to the pot along with 1 teaspoon of chicken stock and 1 cup of water.

Preheat the oven to 160℃ (320℉).

Cover the pot and place it in the oven for 1 hour to 1 hour 30 minutes.
