Peel the potatoes and submerge them in water to prevent browning.
Slice one large red onion.
Slice 6 medium roma tomatoes into 1/4 inch rounds.
Use a mandolin to slice the potatoes to 1/8 inch thickness or a knife to slice them into 1/4 inch thickness.
Spray the bottom and sides of the baking dish with cooking spray and spread marinara sauce evenly to coat the bottom.
Season the marinara sauce with black pepper, salt, and oregano.
Layer the sliced potatoes in the baking dish, overlapping each slice.
Season the potatoes with black pepper, paprika, dried oregano, and a sprinkling of salt.
Add a layer of sliced onions over the potatoes.
Add a layer of sliced tomatoes, placing them only on the borders of the baking dish for the first layer.
Repeat the layering process with the second layer of potatoes, seasoning again with black pepper, salt, and dried oregano.
Add the remaining sliced onions and tomatoes on top, ensuring even distribution.
Add 8 slices of deli style cheese on top of the tomatoes.
Sprinkle 1 cup of shredded mozzarella or gruyere cheese over the top, filling in any gaps.
Season the top layer with dried oregano, paprika, and ground black pepper.
Optionally, add a bit of salt on top.
Preheat the oven to 375°F and place the oven rack in the middle.
Cover the dish with foil and bake for one hour.
