Scrub the sweet potatoes thoroughly.

Preheat the oven to 400°F (204°C).
In a large bowl, add the sweet potatoes and drizzle with light olive oil.
Sprinkle sea salt, roasted garlic and herb mix, a tiny bit of cinnamon, smoked paprika, and black pepper over the sweet potatoes.
Toss the sweet potatoes by hand to ensure they are evenly coated with the oil and seasonings.
Spread the sweet potatoes on a baking sheet in a single layer.
Place the baking sheet in the middle rack of the oven uncovered.
Roast the sweet potatoes for 25 to 30 minutes, tossing halfway through to ensure even cooking and browning.
Check for doneness by inserting a sharp pairing knife into the deepest part of the sweet potato; it should meet no resistance.
After approximately 35 minutes, remove from the oven when they are golden and tender.
Optionally, add fresh herbs like rosemary or thyme on top while still warm.
