Apple Cider Vinegar

Cultural Context

Apple cider vinegar has its roots in the United States, where it has been used for centuries not only as a condiment but also for its purported health benefits. Traditionally, it is made by fermenting apple juice, which transforms sugars into alcohol and then into vinegar. It holds a special place in American kitchens, often used in salad dressings, marinades, and as a natural remedy. Today, its popularity has spread globally, with many variations and uses in culinary practices and health trends.

apples
1/2 cup cane sugar
1 to 1.5 cups water
1

Cut apples into small pieces, including the cores and seeds.

2

Fill a mason jar with the chopped apples.

3

Dissolve 1/2 cup of cane sugar in 1 to 1.5 cups of water and pour it over the apples until they are submerged, leaving about an inch of space at the top.

4

Stir the mixture to mix in the sugar and release air bubbles.

5

Cover the jar with a breathable lid made from an old t-shirt and secure it with a ring to keep fruit flies out.

6

Label the jar with 'apple cider vinegar' and the date.

7

Stir the mixture daily to release air bubbles and prevent the apples from packing too tightly.

8

After about 35 days, strain the mixture using a colander and cheesecloth to remove the apples, pouring the liquid into a clean jar.

9

Check the pH of the liquid with a pH meter, aiming for a level under 4.5.

10

Cover the jar again and let it sit for a few more weeks without stirring, as the apples have been removed.
