Place chopped apples into a mason jar, filling it up but leaving enough room at the top for water to cover the apples completely.
Cover the apples with water, ensuring no apples are sticking out above the surface.
Find a small stone or similar object to weigh down the apples so they stay submerged under the water.
Cover the jar with cheesecloth to allow air circulation while preventing contaminants.
Store the jar in a dark, room temperature place for about three weeks, checking every day or two and stirring the mixture to encourage fermentation.
Observe the bubbling in the mixture, which indicates fermentation is occurring; once bubbling stops, fermentation is complete.
After three weeks, check for a vinegar smell and cloudy appearance, indicating the vinegar is ready.
Carefully pour the mixture into another jar, straining it through cheesecloth to remove any apple bits.
