Cajun Potato Soup

4 large potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup heavy cream
1 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1/4 cup green onions, chopped for garnish

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
