In a large bowl, combine the lettuce, cucumber, pomelo, purple onion, roasted peanuts, and mint leaves.

In a separate bowl, whisk together lemon or calamansi juice, honey, olive oil, salt, and pepper until well combined.

Pour the dressing over the salad and toss gently to combine all ingredients.
