Dice 2 big onions into chunky pieces.

Heat vegetable oil in a pan and add the onions to fry until golden brown.

In a bowl, mix 600 g of Polish white cheese with the mashed potato until smooth.

Add a lot of black pepper and some salt to the potato and cheese mixture, mixing well.

Roll the dough into balls for easier filling.

Cut the dough in half and roll it out thinly on a floured surface.

Use a glass or pasta cutter to cut out circles from the rolled dough.

Place a spoonful of the filling in the center of each circle, fold over, and press to seal tightly.

Bring salted water to a boil and add about 12 pierogi at a time to cook for 3-4 minutes until they float.

Remove the cooked pierogi from the water and serve on a plate.
