Greek yogurt reduces calories while maintaining creaminess

Pull chicken from bones and shred or chop.

Sauté onion in olive oil lightly, add chiles and season to taste with Tony's Chili and Taco Seasoning.

Add lime juice to taste. Add about ½ can enchilada sauce, reserving the remainder for smothering. Cook to marry, taste and adjust seasonings.

Wrap meat filling and cheese with rice and beans (if using) into tortillas and roll.

Can be frozen individually or placed to fill a baking pan.

Smother with the remaining enchilada sauce or salsa and cheese, roasting in a 375° oven until heated through and the cheese is brown and bubbling.
