Make the dry rub by mixing together 1 tablespoon of salt, 1 tablespoon of dark brown sugar, 1 teaspoon of black pepper, 2 teaspoons of paprika, 2 teaspoons of ancho chili pepper, 0.5 teaspoon of onion powder, 0.5 teaspoon of garlic powder, 0.5 teaspoon of mustard powder, 0.5 teaspoon of ground cumin, and 1 teaspoon of dried oregano in a bowl.
Pat the boneless rib eye steak dry with paper towels to help develop a nice browning and crisp exterior.
Rub the dry rub all over the steak using your hands; you won't need to use all of the dry rub for one steak, as it makes enough for two steaks.
Let the steak rest for 20 to 30 minutes before cooking to ensure even cooking and to retain moisture.
Preheat the air fryer to 400°F.
Place the steak in the air fryer basket using tongs, ensuring it is in the center of the basket.
Cook the steak in the air fryer at 400°F for 6 minutes for medium-rare; for medium doneness, cook for 7 to 8 minutes, and for medium-well, cook for 9 to 10 minutes.
Check the steak for doneness using a meat thermometer inserted from the side, avoiding bones or fat; remove the steak when it is 3 to 5 degrees below your desired temperature as it will continue to cook after removal.
Transfer the steak to a cutting board and let it rest for 10 to 15 minutes to allow juices to redistribute.
Slice the steak against the grain and serve.
