Slice cucumbers on a mandolin into thin pieces.
Add thinly sliced shallots and garlic to the cucumbers.
In a bowl, add fresh dill, black peppercorns, white peppercorns, bay leaves, red pepper flakes, mustard seed, and coriander to the cucumbers.
Add salt to the mixture; you can salt the cucumbers ahead of time to let them drip out.
Prepare the pickling liquid by combining 3 cups of water, 2 cups of white vinegar, and 1 cup of sugar.
Heat the pickling liquid until the sugar dissolves, ensuring it is not too watery, sugary, or vinegary.
Let the pickling liquid cool down, possibly refrigerating it for a few hours to ensure it is cold before using.
Pour the cooled pickling liquid over the cucumber mixture, ensuring everything is submerged.
