Ingredients
- ●2 cups heavy cream
- ●1 cup whole milk
- ●1 cup sugar
- ●1 cup durian pulp (fresh or frozen)
- ●1 tsp vanilla extract
- ●1/2 tsp salt
Instructions
- 1In a mixing bowl, combine the heavy cream, whole milk, and sugar. Whisk until the sugar is fully dissolved.
- 2Add the durian pulp to the mixture and blend until smooth. You can use an immersion blender or a regular blender for this step.
- 3Stir in the vanilla extract and salt, mixing well to combine all ingredients.
- 4Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it is thoroughly chilled.
- 5Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 6Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.
- 7Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly for easier scooping.

Durian Ice Cream
Combine full cream milk, egg yolks, caster sugar, vanilla extract, and salt in a bowl and mix well.
Add durian pulp and coconut milk to the mixture and blend until smooth.
In a separate bowl, whip the dairy whipping cream until soft peaks form.
Fold the whipped cream into the durian mixture gently until well combined.
Add almond nibs and additional durian pulp into the mixture and mix gently.
Pour the mixture into a rectangle mould and freeze for 2 hours.
After 2 hours, remove from freezer and stir the mixture, then freeze for another 1½ to 2 hours.
Finally, freeze for an additional 6 hours or overnight before serving.
