Chop, soak, wash, and clean the chicken wings as shown, repeating the same procedure for all.
Put chicken wings in a bowl, squeeze some lemon, add 1 teaspoon of vinegar, and add cold water. Mix well and soak in water.
Refrigerate for 30 minutes, then wash and clean the wings, plucking any hairs off from the wings.
Place chicken wings one by one on paper towels and dab and pat them dry with kitchen towels until completely dry.
Put chicken wings in a mixing bowl.
Prepare the dry mixed spice by adding 1 tablespoon Kashmiri chili powder, 1 teaspoon brown sugar, 1/4 teaspoon black pepper powder, salt to taste, 1/4 teaspoon onion powder, 1/4 teaspoon paprika powder, and 1/4 teaspoon garlic powder. Mix well.
Add the dry mixed spices to the chicken wings and combine well. Add 1 teaspoon of soy sauce, 1/2 teaspoon of Szechuan chutney, and some oil. Mix thoroughly until all wings are nicely seasoned.
Cover with cling film and let the chicken wings marinate in the refrigerator for 1 to 2 hours.
Line parchment paper in a tray and place an oven-proof wire rack on it. Brush some oil on the rack so the chicken wings won't stick.
Place the chicken wings on the rack with the help of tongs. Bake in a preheated oven at 220 degrees Celsius for 20 minutes on each side, or air fry them for 8 to 10 minutes at 400 degrees Fahrenheit on each side, or cook until done.
After 20 minutes, flip the wings. If some wings are not coated well, apply leftover marination and pop them back in the oven for 20 more minutes.
Place the cooked chicken wings in a mixing bowl. They should be golden, crispy, and tender.
To make the honey garlic barbecue sauce, melt 20 grams of butter in a pan, add 1 teaspoon of minced garlic, and sauté until fragrant. Then add 1 teaspoon of honey, 1 tablespoon of hot sauce, 1/3 cup of barbecue sauce, 1 tablespoon of tomato ketchup, and 1/4 teaspoon of chili flakes. Keep stirring and simmer for 3 minutes.
You can add the chicken wings to the sauce and cook until the sauce caramelizes, but the creator chooses to pour the sauce over the wings instead.
Toss the wings very well in the sauce, then place them back on the same rack one by one. If some wings are not coated well, apply leftover sauce with a brush.
Pop them back in the oven and broil for 5 more minutes to caramelize the sauce. The total baking time is 45 minutes.
Once done, plate the wings by brushing the same sauce on the dish, then placing the chicken wings on top.
Sprinkle with cilantro, green onions, and sesame seeds. Twist and turn the wings to ensure they are coated.
The creator mentions that the bones will come out easily, indicating the wings are moist, tender, and juicy.
