Ingredients

  • 2 cups mashed potatoes

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped green onions
  • 2 large eggs
  • oil for frying

Instructions

  1. 1In a large bowl, combine the mashed potatoes, flour, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and chopped green onions. Mix until well combined.
  2. 2Add the eggs to the potato mixture and stir until fully incorporated.
  3. 3Shape the mixture into small patties or balls, about 1-2 inches in diameter.
  4. 4Place the breadcrumbs in a shallow dish. Roll each potato patty in the breadcrumbs until fully coated.
  5. 5Heat oil in a deep frying pan over medium heat. Once hot, carefully add the potato patties in batches, making sure not to overcrowd the pan.
  6. 6Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
  7. 7Remove the fried mashed potatoes from the oil and place them on a paper towel-lined plate to drain excess oil.

  5. 5Spoon a portion of the chicken Alfredo mixture onto one end of each strip of dough.
