Let the chicken sit at room temperature for 20-30 minutes.
Season chicken pieces with about 1.5 teaspoons of kosher salt and ground pepper on both sides.
Drizzle smoked paprika over the chicken and rub it in.
Heat 3-4 tablespoons of olive oil in a large skillet over medium heat.
Place the chicken in the skillet and increase the heat to high.
Sear the chicken for 2 minutes until golden brown, then flip and sear the other side.
Add a couple stems of fresh thyme and a little butter to the pan, spooning the butter over the chicken.
Transfer the chicken to a baking dish and finish cooking in the oven for 10-15 minutes or until the internal temperature reaches 165°F (74°C).
Cut the potatoes into 1-inch thick slices.
Put the sliced potatoes in a baking pan and drizzle with olive oil.
Season the potatoes with paprika, salt, pepper, and fresh thyme, mixing to coat evenly.
Add liquid butter on top of the potatoes before baking.
Bake the potatoes in the oven at 350°F (175°C) for about 1 hour.
In a bowl, mix together 1-2 ounces of soy sauce, the same amount of honey, and a little salt and pepper for the glaze.
Warm the glaze ingredients in a pan to activate them.
