Pat the chicken thigh dry with a paper towel and remove excess sinew and fat.

Peel 3 new potatoes, remove any eyes, and cut them in half.

Soak the potatoes in water and then drain.

Cut 1/2 onion into 6 wedges, removing the core and placing the cut side down.

Peel 1/2 carrot and cut it into rounds.

Spread the onion in the bottom of the inner pot and place the chicken on top.

Add the new potatoes and carrot on top of the chicken.

Add 1 tablespoon of sake, 1 tablespoon of mirin, 1 tablespoon of sugar, 2 tablespoons of soy sauce, 1/4 teaspoon of dashi, and 200cc of water.

Cover with a drop lid and place it in the cooking pot, setting it to high mode for 3 hours.

Remove the strings from 2 snap peas, place them in a heatproof dish, add 1 teaspoon of water, cover loosely with plastic wrap, and microwave at 600W for 30 seconds to slightly cook them.

Shred the chicken and serve the meat and potatoes in a bowl, garnished with the snap peas.
