Boil water in a large pot over high heat.
Add a generous pinch of salt to the boiling water, aiming for the salinity of seawater.
Chop broccoli stalks into large slices and add them to the boiling water to cook for four minutes.
Chop three cloves of garlic finely.
Heat about two tablespoons of olive oil in a pan over high heat.
Add chopped mushrooms and peppers to the pan and sauté.
Add a little extra olive oil to increase the surface temperature for quicker cooking.
Prepare a simple emulsion sauce using pasta water and oil, which will create a creamy sauce with the starch from the pasta water.
Once the pasta is cooked, reserve some pasta water and drain the rest using a colander.
Transfer the drained pasta and broccoli into the pan with the sautéed vegetables.
Mix everything together, adding reserved pasta water as needed to create the sauce.
Taste and adjust the seasoning with black pepper, a pinch of salt, and grated parmesan cheese before serving.
