Rinse 2 cups of medium grain rice until the water runs clear.
Spread the rinsed rice in an even layer in the rice cooker and add equal parts water.
Close the rice cooker and cook the rice according to the machine's instructions.
Grease a sheet tray to prevent chicken from sticking.
Season 6 to 8 skinless, boneless chicken thighs with salt on both sides.
Place the chicken thighs on the greased sheet tray, skin side up, and bake in the oven at 375°F for 30 to 35 minutes.
While the chicken is baking, prepare the glaze by chopping a medium red jalapeno and adding it to a saucepan with 6 tablespoons of soy sauce, 4 tablespoons of rice vinegar, and 2 tablespoons of honey.
Bring the glaze mixture to a boil over medium-high heat, then reduce heat to medium and mix 1 teaspoon of cornstarch with 1 teaspoon of water, whisking until combined before adding it to the glaze.
Once thickened, remove the glaze from heat and add 2 crushed cloves of garlic, allowing it to steep.
Prepare the vegetables by cutting two crowns of broccoli into smaller pieces and measuring out 1.5 bags of frozen edamame.
In a 12-inch stainless steel pan, heat vegetable oil over medium-high heat and add the broccoli and edamame, seasoning with salt.
Let the vegetables char for 2 to 3 minutes before tossing, then reduce heat to medium and cook for about 5 minutes until broccoli is par-cooked and edamame is hot, adding lemon juice to taste.
Remove the chicken from the oven halfway through cooking, glaze both sides of the chicken, and return to the oven for the remaining cooking time.
