2 tbsp vegetable oil
chili to taste minced
2 garlic cloves minced
1 tsp ginger minced
1/4 cup ciboulette chopped
1/2 lemon juice
fresh mint few leaves
kosher salt to taste

Thinly chop chili pepper, ciboulette, garlic, and ginger. Keep it aside.

Preheat a pan at medium-high heat and drizzle vegetable oil.

Add the garlic, ginger, chili, and sauté until it is fragrant.

Add butter to melt and pour white wine. Let the wine evaporate for approx. 30 seconds.

Quickly place the clams in the hot pan taking care that they are facing up and in one layer. Cover and let them steam for one minute.

Uncover the lid and add the ciboulette, a few mint leaves, and drizzle with lemon juice.

Cover and cook for one more minute. Avoid overcooking as the clams become tough and rubbery.

Serve immediately and spoon over the sauce on the clams.
