Start by heating half a cup of water to around 110 degrees Fahrenheit; be careful not to exceed 120 degrees to avoid killing the yeast.
Add sugar and active dry yeast to the warm water and mix; let it sit for about five minutes until it becomes frothy and foamy.
In a mixing bowl, combine bread flour and fine sea salt.
Once the yeast mixture is frothy, add it to the flour mixture and mix with a rubber spatula until a shaggy dough forms.
Add olive oil and greek yogurt to the shaggy dough and continue mixing until incorporated; the dough will still be shaggy with some bits of flour remaining.
Transfer the dough to a clean work surface and knead by hand for five minutes until all flour is incorporated and the dough is smooth and uniform.
Oil a medium-sized bowl with olive oil, form the dough into a ball, and place it in the bowl; cover with plastic wrap.
Place the covered bowl in the refrigerator for cold fermentation; let it sit for at least 30 minutes to an hour, or up to five days for a more complex flavor.
When ready to use, remove the dough from the refrigerator and let it sit for 30 minutes to an hour to warm up before rolling out.
