Preheat the oven to 350°F (175°C).
In a skillet, melt 2 tbsp of margarine or butter.
Scramble 4 eggs in the skillet until fully cooked and set aside to cool.
Chop up about 1 cup of leftover ham into smaller pieces, removing any tough bits.
In a bowl, combine the chopped ham, scrambled eggs, and 1 cup of cheddar cheese, mixing well to create the filling.
Cut parchment paper in half and prepare two small baking sheets.
Open each biscuit as much as possible to form a pocket.
Fill each biscuit with the ham and cheese mixture, sealing them back up after stuffing.
In the bowl used for the eggs, add a little water to create an egg wash and mix.
Brush the tops of the biscuits with the egg wash and sprinkle a little cheese on top.
Bake the biscuits in the preheated oven for about 18 to 20 minutes until golden brown.
