Start by making the savory pie crust using 2.25 cups of all-purpose flour and 1 teaspoon of salt.
Add 3/4 cup of cubed unsalted butter and mix with a fork or pastry cutter until well combined.
Add about 3 tablespoons of cold water and mix until the dough comes together, adding more water as needed.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Prepare the filling by mincing 1 shallot and 1 garlic clove, and chopping 6 white mushrooms and 2 handfuls of baby spinach.
Cut 8 slices of ham into small pieces.
In a heated skillet, melt 1 tablespoon of butter and sauté the minced shallot and garlic until translucent.
Add the chopped mushrooms and spinach to the skillet and cook until wilted, then drain excess liquid.
Roll out the chilled dough on a floured surface to about the thickness of a coin and line a loose bottom quiche dish.
Pinch the edges of the dough to fit the dish and make holes in the base with a fork.
Refrigerate the lined crust for another 30 minutes.
Blind bake the crust at 350°F for 15 minutes using parchment paper and semolina as weights.
Remove the parchment and semolina, then bake the crust for an additional 5-10 minutes until lightly golden.
In a mixing bowl, whisk together 4 eggs, 1.5 cups of heavy cream, a little salt, freshly ground pepper, and freshly grated nutmeg.
Layer the spinach and mushroom mixture in the crust, followed by the ham, and sprinkle with 1/2 cup each of gruyere, cheddar, and parmesan cheese.
Pour the custard mixture over the filling and sprinkle with more parmesan, chili flakes, and parsley.
Bake the quiche at 350°F for about 35 minutes until the center is set.
