Mix flour, semolina, salt, and sugar in a large bowl.
Dissolve yeast in warm water and let it sit until frothy, about 5 minutes.
Add the yeast mixture and olive oil to the dry ingredients.
Knead the dough until smooth and elastic, about 10 minutes.
Cover the dough with a damp cloth and let it rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to a high temperature, around 475°F (245°C).
Divide the dough into equal portions and shape each into a flat round.
Roll out each piece on a floured surface until thin, about 1/8 inch thick.
Sprinkle with cumin and sesame seeds, pressing them lightly into the dough.
Place the flatbreads on a baking sheet or grill.
Bake or grill until puffed and lightly browned, about 3-5 minutes per side.
Remove from the oven and brush with olive oil, if desired.
Serve warm with dips or as a wrap.
