Spinach and Chickpeas Baked with Greek Feta

2 cups fresh spinach, chopped
1 can (15 oz) chickpeas, drained and rinsed
1 cup Greek feta cheese, crumbled
1/2 cup onion, diced
2 cloves garlic, minced
1/4 cup olive oil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/2 cup breadcrumbs (optional)

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and sauté for an additional minute until fragrant.

Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

In a large bowl, combine the chickpeas, sautéed spinach mixture, crumbled feta cheese, oregano, salt, black pepper, and red pepper flakes (if using). Mix well.

Transfer the mixture to a greased baking dish. If desired, sprinkle breadcrumbs on top for added crunch.

Bake in the preheated oven for 25-30 minutes, or until heated through and the top is slightly golden.

Remove from the oven and let it cool for a few minutes before serving.
