1

Spiralize zucchini into noodles (zoodles) using a spiralizer.

2

Add water to a skillet and heat over medium-high heat.

3

Add minced garlic to the skillet and sauté for a couple of minutes.

4

Add 3 cups of cherry tomatoes to the skillet and let them simmer until they release their moisture, about 5 minutes.

5

Season the tomatoes with a little salt and cook until they cook down a bit, then transfer them to a bowl and set aside.

6

In the same skillet, add more water and then add red pepper, zucchini, yellow squash, onion, and mushrooms.

7

Spread the vegetables out in the skillet to allow them to caramelize, stirring every couple of minutes.

8

Cook until the vegetables start to caramelize, about a few minutes, without constant stirring to avoid releasing moisture.

9

Add spices: oregano, smoked paprika, rosemary, sage, thyme, red pepper, and a little salt to the vegetables.

10

Return the cooked tomatoes to the pan and stir to combine.

11

Add fresh spinach and let it wilt down a bit.

12

Turn off the heat and add the spiralized zucchini and black olives, stirring to combine.

13

Plate the dish and taste.
