Add 400 grams of self-raising flour to a mixing bowl.
Add 7 grams of fast action yeast to one side of the flour.
Add 1 teaspoon of salt to the other side of the bowl, avoiding contact with the yeast.
Add 1 tablespoon of caster sugar and some dried oregano to the bowl.
Use a dough hook to mix the ingredients together, or knead by hand.
Add 300 mls of lukewarm water to the mixture to activate the yeast.
Knead the dough for 6 minutes until stretchy and soft.
Cover the dough with a tea towel and let it prove in a warm spot until doubled in size.
Knock the air out of the dough after it has risen.
Flour a surface and roll out the dough into a rectangle shape.
Use 8 slices of cheese, placing them in a grid pattern (4 across, 2 down).
Spread a tomatoey hot sauce over the cheese slices.
Layer 2 spicy pepperoni slices on top of each cheese slice.
Add fresh basil on top of the pepperoni slices.
Cut the dough into squares, folding each square in half and pushing it into a baking dish.
Let the assembled dough prove for 15 minutes before baking.
Brush the top with olive oil before baking.
