Preheat the oven to 350°F (175°C).
Prepare a springform pan by spraying it with oil spray and placing a sheet of parchment paper on the bottom.
In a stand mixer bowl, whisk 2 eggs with 2 teaspoons of vanilla extract and 2/3 cup of sugar until light and fluffy.
Add 1/4 cup of oil and 1/3 cup of orange soda, then sift in 1 cup of all-purpose flour, a pinch of salt, and 2 teaspoons of baking powder on top of the wet ingredients.
Fold everything gently on low speed with a whisk or by hand with a spatula.
Pour the batter into the prepared pan and bake for about 25 minutes.
After baking, let the cake sit for about 10 minutes, then carefully remove it using the parchment paper and place it onto a cooling rack to cool completely.
In the meantime, whisk together 1 package of instant pudding mix, 1 1/4 cups of whipping cream, and 2 teaspoons of vanilla extract until well combined.
Add 3/4 cup of sour cream and beat on high speed for about 2 to 3 minutes.
Spread the vanilla pudding cream evenly on the cooled cake.
Arrange sliced strawberries on top of the cream.
Prepare the cake glaze according to package instructions, adding red food coloring if desired.
Carefully layer the glaze over the cake starting from the middle, using a spoon to avoid pouring it all at once.
Allow the glaze to set before serving with whipped cream.
