Yellow mustard is usually cheaper and can work well for flavor.

Empty the chickpea water (aquafaba) into a small saucepan.

Boil the aquafaba on medium-high heat for five minutes, stirring occasionally.

Add ice to a large mixing bowl.

Place a smaller bowl on top and pour in the boiled aquafaba, stirring until cold.

Add 1 tablespoon lemon juice and 1 tablespoon chickpeas to the blender.

Add 1 tablespoon Dijon mustard to the blender.

Blend on high to pulverize the chickpeas, then turn it down to medium-high.

Slowly add in 1 and 3/4 cups of grapeseed or vegetable oil while blending.

Season with pink salt and mix.
