Veggie Sausage White Bean Skillet

1 package (12 oz) veggie sausages
1 can (15 oz) white beans
2 cups vegetable stock
4 cloves garlic, minced
1/2 cup sun dried tomatoes, chopped
2 shallots, diced
1/4 cup nutritional yeast
1 tsp dried oregano
1 tsp chillies, crushed
2 tbsp balsamic vinegar
2 cups kale, chopped
Salt to taste

Make a purée of half of the white beans and some vegetable stock and set aside.

Brown slices of veggie sausage in a hot pan for about 6-7 minutes and set aside.

Sauté shallots with garlic, sun dried tomatoes, nutritional yeast, dried oregano, and chillies in the skillet.

Add whole white beans, the white bean purée, balsamic vinegar, kale, and season with salt and pepper.

Once the kale is wilted and the stew is seasoned, add the browned veggie sausage slices back in.
