Put on gloves and mush up the pork mince until fine but not completely smooth.

Mix corn flour with water and add sodium nitrate, salt, sugar, garlic powder, and pepper until dissolved.

Add milk powder to the pork mince and mix thoroughly.

Oil the inside of the ham forming tubes to prevent sticking.

Stuff the pork mixture into the tubes, compacting it to remove air pockets.

Place the tubes in a pot with water and bring to a rolling boil.

Cook until the internal temperature reaches 70°C (160°F).

Let the spam cool completely for a couple of hours, then refrigerate overnight.

Remove the spam from the tubes and cut into slices for burgers.
