Prepare the shortcrust pastry by mixing the flour, sugar, ground almonds, and a pinch of salt in a bowl.
Add the cold, diced butter and mix until crumbly.
Incorporate the egg and egg yolk into the mixture and form a dough.
Chill the dough for a while, then roll it out and fit it into a 28 cm tart pan.
Blind bake the crust using beans for about 15-20 minutes until lightly golden.
For the lemon filling, zest the lemons and juice them to measure 100 ml of juice.
In a bowl, whisk together the sugar and eggs until well combined.
Add the lemon juice, lemon zest, and heavy cream, mixing until smooth.
Pour the filling into the pre-baked crust.
Bake the tart in the oven until the filling is set, about 25-30 minutes.
