Pizza Bianca

Cultural Context

Originating from the Lazio region of Italy, Pizza Bianca is a beloved variation of traditional pizza, characterized by its lack of tomato sauce. This dish highlights the quality of its ingredients, such as creamy cheeses and aromatic herbs, making it a favorite for those who appreciate simplicity and flavor. In modern times, Pizza Bianca has gained popularity beyond Italy, often found in pizzerias worldwide as a gourmet option.

1

Set up your Halo Pro Spiral Mixer.

2

Dissolve your salt into water and add yeast.

3

Add the mix to your mixer bowl followed by the flour.

4

Mix until fully combined and then knead at a low speed for a further 10 minutes.

5

Once kneaded, scrape the dough into a small bowl and cover with a damp towel.

6

Gently pick up the dough and allow gravity to pull the dough downward so it hangs like a curtain with your fingers in the middle.

7

Brush your sheet pan with olive oil, and lay the dough on it.

8

At least two hours before you're ready to prepare your pizza, take the dough out of the fridge to allow it to return to room temperature.

9

To stretch your dough into the sheet pan, place your fingers under the dough and pull towards the edge of the pan.

10

Fire up your pizza oven and preheat until the stone reaches 752 degrees Fahrenheit or 400 degrees Celsius.

11

Drizzle olive oil over the top of the dough, then firmly press your fingers into the dough to create dimples.

12

Salt to taste.

13

When the oven is at heat, reduce the flame and place the pan at the front of the oven and cook for six minutes or until the top of the pizza is golden.

14

Take the pizza out of the oven, slice and season with salt before sharing.
