Prepare the peri peri marinade in a food processor.
Add 1 diced red onion, 1 diced yellow bell pepper, 2 bird eye chilies, 4 cloves of garlic, 2 tsp lemon zest, 1 tsp paprika powder, 2 tsp salt, juice of a fresh lemon, and a few thyme leaves to the food processor.
Blend until everything is well processed.
Add 1/2 cup of white vinegar and 1/4 cup of vegetable oil to the mixture and blend again until smooth.
Marinate the chicken by placing it in a bowl with the marinade and massaging it well to ensure all parts are coated.
Let the chicken marinate in the fridge for at least 4 hours or overnight for better flavor.
After marinating, place the chicken in a baking tray with a few thyme leaves.
Cover the tray with foil, ensuring it is properly secured, and bake in the oven at maximum temperature for at least 1 hour.
After 1 hour, remove the chicken from the oven and take off the foil, separating any liquid that has released from the chicken.
Brush some oil on top of the chicken and place it back in the oven for another 15 to 20 minutes or until golden brown and the skin is crisp.
