Today, variations abound, with many incorporating local ingredients like herbs and spices, making it a beloved dish in homes and restaurants alike.

Prepare onions by removing the outer skin and cutting off the ends.
Cut onions into small cubes.
Cut cilantro into smaller pieces.
Cut tomatoes into small cubes about half an inch in size.
Clean the core of the green pepper, remove seeds, and cut into small quarter-inch pieces.
In a high-sided pan, add about 2 tablespoons of oil on medium-high heat.
Once the oil is hot, add the onions and cook until they become translucent.
Add salt and stir.
Add tomatoes and green peppers to the onion mixture and stir until the peppers are soft.
Crack open 5 eggs into a mixing bowl.
Add half a teaspoon of black pepper, 1 teaspoon of cinnamon, half a teaspoon of baking soda, half a teaspoon of salt, and half a teaspoon of 7 spice to the eggs and mix well.
Stir in half a cup of flour and half a cup of water into the egg mixture until combined.
Add the cooked onion, tomato, and pepper mixture to the egg mixture and stir well.
Heat a frying pan on medium-high heat and add oil to cover the bottom.
Using a ladle, scoop the mixture into the frying pan and tilt to thin it out.
Cook until the edges are set, then gently lift the sides to check for doneness.
Flip the mixture to cook both sides until done.
Serve hot with tomatoes and season with salt.
