Dice one onion small.
Slice three garlic cloves.
Cut 6 ounces of pancetta into 0.5 inch cubes and transfer to a plate.
Get a saucepan, put it on low heat, and add the pancetta.
Once the pancetta is added, increase the heat to medium and sauté for about 2-3 minutes.
Add the sliced garlic and sauté for an additional 2-3 minutes, keeping an eye on it to prevent burning.
Add a pinch of salt to the mixture.
Pour in 1/4 cup of vodka and let it reduce for about 30 seconds.
Add 28 ounces of crushed tomatoes, torn basil leaves, and fresh oregano, and season with freshly ground black pepper.
Decrease the heat to low and let it cook for 30 minutes, stirring occasionally.
In a separate pot, bring water to a boil, season with salt, and add 12 ounces of fresh homemade gnocchi.
Cook the gnocchi for 4 minutes until they float.
Prepare a sheet pan with vegetable oil to prevent gnocchi from sticking together, and carefully transfer the cooked gnocchi onto it.
Preheat a non-stick pan to medium heat, add some olive oil, and place the gnocchi in the pan.
Season the gnocchi with a pinch of salt and some freshly ground black pepper.
Sear the gnocchi until golden brown on both sides, about 1.5 minutes on each side, without disturbing them.
Once seared, transfer the gnocchi onto a plate lined with a paper towel.
After 30 minutes, remove the oregano stems from the sauce and add 1 cup of heavy cream.
Mix in 3/4 cup of Parmesan cheese and let it cook for an additional minute until flavors are incorporated.
Combine the gnocchi with a couple ladles of vodka sauce in a preheated sauté pan.
Transfer the gnocchi with vodka sauce onto a plate and add some Parmesan cheese before serving.
