Get your vegetables ready. I'm using a 12-inch cast iron skillet to sauté and bake everything.

Dice 2/3 of a medium yellow onion and add it to the skillet with a little bit of olive oil and a pinch of salt.

Sauté the onion until softened, then add 1/2 cup of finely diced bell pepper and mix together.

While the peppers and onions cook, clean off some mushrooms with a paper towel and chop about 1 cup of them to add to the skillet.

Add a pinch of salt to the mushrooms and stir them in with the onions and peppers.

Next, prepare 1 heaping cup of broccoli by cutting it into small pieces and add it to the skillet.

Add 3 tablespoons of finely minced fresh basil to the vegetables and stir.

Fold in 1 1/2 cups of fresh spinach until it wilts slightly, then turn off the heat.

Boil a few small yellow potatoes until soft, then chop them into bite-sized chunks.
