Phyllo dough is lighter and can be made from scratch.
Make the pie crust by combining 1.5 cups flour, 1 teaspoon salt, and butter in a food processor.
Slowly add water while the food processor is running until the dough forms a ball.
Refrigerate the dough for 1 hour to rest.
In a pan, heat 1 tablespoon olive oil and 1 tablespoon butter until melted.
Add beef to the pan and cook on all sides until browned.
Add chopped carrots and onions to the pan and cook until onions are soft, about 5 minutes.
Stir in garlic and Worcestershire sauce.
Sprinkle flour into the mixture and cook for a couple of minutes, ensuring it's well mixed.
Add 3/4 cup dark ale and stir until it begins to thicken.
Add beef stock, 1 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon fresh thyme, and 1/2 teaspoon rosemary, then return the beef to the pan.
Let the mixture simmer for about 45 minutes.
Roll out the pie crust to about an eighth of an inch thick.
Place a piece of foil over the pie crust and weigh it down with an oven-proof dish, then bake for 15 minutes.
Remove the dish and foil, then bake for an additional 5 minutes to crisp the bottom.
Roll out a second piece of dough into a 10-inch circle for the top crust.
Brush the edges of the cooked pie crust with egg wash.
Fill the pie crust with the beef filling.
Drape the top crust over the filling using a rolling pin and seal it with the egg wash.
Brush the top of the pie with egg wash.
Bake the pie in the oven for 15 minutes.
